To calculate how shelf life is affected, each food item in Foodtel's database is linked to a calculation model, which is also used to calculate the best before date. Each model utilizes measured product temperature collected during identified temperature deviations to determine the rate of bacterial growth in the food.
Using this and the duration of the temperature deviation, the current bacterial culture and spoilage time under the conditions of the temperature deviation are calculated, as well as the change when the food returns to the correct storage temperature after the deviation.
